On March 6-7 Jet Tila of Wazuzu at the Encore in Vegas and Alex Ageneau sous at The Royce join together for two nights of Bistronomics, dinners that focus on "economy, variety, and seasonality." The French-influenced menu includes dishes like butter ball potato and smoked cod with crème fraîche and cucumber dressing; and skirt steak with cauliflower escabeche, cauliflower cream, brunoise of calamari, and squid ink hollandaise.
