DOWNTOWN— Blackbook reports that early this summer The Perch, a three floor rooftop restaurant/lounge, will debut atop the Pershing Square Building on S. Hill Street (bar portion opens in May). Partners Coly Den Haan and Rachel Thomas (both of The Must) plan to serve "Gallic classics with an American twist" in a non-pretentious art deco space. [Blackbook]
