And speaking of pop-ups, chef Eric Greenspan (The Foundry) has signed on to cook at Tart on Fairfax from May 12-15, practicing a new breakfast concept built around family style breakfast and lasagna (this is a separate venture from his under construction grilled cheesery). Greenspan is going to offer a few different types of breakfast lasagna: traditional breakfast lasagna layered with pancakes, sausage, bacon, potatoes (YIKES); egg white lasagna with layers of veggies and egg whites; and Jewsagna with lox, cream cheese, and bagels layered together (DOUBLE YIKES). On the side, Greenspan's version of stuffed hash-browns with choice of cheeses, meats, and veggies mixed in and served family style.
