Cleo's Shawarma Lamb Burger with Smashed Falafel

As part of Eater's first ever burger week, chefs at six LA restaurants that don't serve burgers agreed to make a special limited edition burger, served just this week and next. Every day we'll highlight a new burger, starting with today's Shawarma Lamb Burger with Smashed Falafel from Cleo.

Let the burger love continue. Yesterday we brought you The Spice Table's Southeast Asian Cheeseburger, today we talk to Daniel Elmaleh, executive chef at Cleo in The Redbury hotel. Anyone that has eaten at Cleo knows the the restaurant focuses on Mediterranean small plates, therefore to craft a burger for Eater readers Elmaleh went for an oversized slider. It's basically halfway between a burger and a traditional slider, priced at $7 a pop.

Elmaleh wanted to create a burger that would enable guests to experience the tastes of Cleo in one bite (or more than one bite), the burger combines a variety of elements that are found in other dishes, kind of like a “greatest hits” for the restaurant.

So, up above we have a ground lamb patty, layered with lamb shawarma, smashed falafel, curry caramelized onions, feta, pickles, cucumbers, harissa aioli, all on a challah bun.
