No, really, have a seat, there are clearly more than enough to go around. Up above, Steven Arroyo's (Cobras & Matadors, Potato Chips) Escuela, the taco shop we've been tracking now for a full year. Word on the street is that it's finally opening later this month, and as far as design, most everything is in place. Last summer at East LA Meets Napa Arroyo discussed his approach to the menu, which he described as an attempt to "re-introduce the taco." Escuela will serve breakfast, lunch, and dinner, look for traditional Mexican dishes like chilaquiles and migas in the AM, and an ever-changing menu of mostly tacos plus a few rotating proteins during the PM.
