Paulette Macarons Drops the "Pau," Opening in Pasadena

With its original home nestled in Beverly Hills and a second confectionary that opened last September in downtown, Paulette Macarons launches location three in the shuttered Mrs. Beasley's space on S. Fair Oaks. But wait, hold up, that signage reads "'lette" Macarons, what happened to the "Pau"? According to the macaron maven's website,

"Our Beverly Hills based macaron shop, famous for its kaleidoscopic offerings since 2007, started spring with a new name – 'lette: Continuing the successful collaboration between Paulette Koumetz, owner and macaron enthusiast, and Christophe Michalak, French pastry chef extraordinaire and winner of the 2005 Coupe du Monde de la Pâtisserie – "pau" was the victim of a trademark lawsuit, but 'lette carries on their unbroken passion du macaron: let them eat macarons!"
So that explains that. In any event, 'lette Pas is expected to start serving in late June/early July. [EaterWire]
