Here now the details for that Vegas All- Star Cochon 555 bash. The competition takes place at The Cosmopolitan on July 24, but instead of five chefs, five pigs, and five winemakers, this Cochon on crack includes 10 chefs, four butchers, and 14 different heritage breed pigs which will be flown to Vegas for the match. Participating chefs and butchers include Joshua Applestone of Fleisher’s Meats (New York), Mary Dumont of Harvest (Boston), Duskie Estes & John Stewart of Zazu (Sonoma), Ryan Farr of 4505 Meats (San Francisco), Devin Knell of French Laundry (Napa), Mark Ladner of Del Posto (New York), Amelia Posada and Erika Nakamura of Lindy & Grundy (Los Angeles), Michael Sullivan of Blackberry Farm (Walland, TN), John Sundstrom of Lark (Seattle), the 2010 "King of Porc" David Varley of Michael Mina (San Francisco), and the 2011 Grand Cochon winner to be chosen at the Food & Wine Classic in Aspen. Tix cost $150 a head or $200 to roll VIP and show up early for a private tasting.
