It's been, oh, nine months since word broke that Silo Vodka Bar planned to claim 2,000 square feet spread across two floors in downtown's Haas Building. Despite the fact that Silo has yet to open, the venue already acquired its first five star Yelp review presumably posted by someone attached to the project. As it so generally goes. Anyway, on to the news. Silo's construction is almost complete and reps say the spot should open early this month.
Head barman Casey Irvine (The Must) created the drink menu and he explains that despite the establishment's name, the bar will serve an equally balanced mix of martinis and non-vodka based libations. Drinks will be crafted from fresh squeezed juices and homemade syrups, looks for creations like Ginnie the Pooh (gin, honey, lemon, garnished with gummy bears) and a Shnawberry Martini (vodka, gin, berries, agave). That plus six beers on tap and vino as well, still tbd. Silo's hours of operation run daily from 4PM-2AM.
