Word just in that the shmancy L'Ermitage hotel, now owned by the Viceroy Hotel Group, has appointed Joseph Elevado as the property's next chef. Elevado trained under Nobu Matsuhisa and will oversee L'Ermitage's culinary program from the launch of a new signature restaurant to different in-room dining menus to revamped poolside eats. As for the unnamed restaurant, expect Italian-Asian fusion using Japanese technique and both Asian and Italian flavors. Meanwhile, the in-room dining and poolside menus will focus more around seasonal California fare. [EaterWire]
