Umami Goes Green, Launching Flagship Resto at The Grove

Holy cats! Umami is growing some more. The burger brand which commands eight eateries at the moment (La Brea, Los Felix, Hollywood, Santa Monica, Studio City, Anaheim, Downtown, San Francisco- opening in the fall) is launching its flagship cafe this fall at The Grove in the shuttered Wonderland Bakery space with all sorts of shmancy eco design and indoor-outdoor seating for 175.

Riffing of the traditional model, traditional as it is untraditional since not one restaurant looks alike, founder Adam Fleischman and sbe have upped the green factor and we're not talking about salad. Umami outpost number nine is being built from sustainable and recycled materials, there will be solar power in addition to other eco practices. Think FSC (Forest Stewardship Council) certified hardwoods, bamboo and fiber board, Energy Star rated appliances, and an overall LEED Certified space. It's no news Umami was thinking about going green, but this is the first step.
