Walter Manzke (Bastide, Church & State) is finallllllllly ready to talk about his forthcoming downtown restaurant, République. And yes, it will be French. In fact, not only is Manzke and wife Marge planning to offer both fine and casual dining within République, but the two will also debut an adjacent bakery, Factory Baking Company, all within an 8,000 square foot space at Factory Place Arts Complex in the Arts District downtown.
République will offer 140 seats, a bar area, both indoor and patio seating, a 20-seater private dining room, an open kitchen, and a menu inspired by "Paris’ thriving ‘bistronomy’ movement" or high-end gastronomic food in a bistro setting. Sounds just like Church & State during Manzke's rule. Which is a good thing.
Meanwhile, Factory Baking Company, located at the opposite end of the building, will included bakery and cafe fare inclusive of freshly baked croissants, coffee, salads, sandwiches, artisanal breads, charcuterie platters and light dinner. Also expect some larder goods for sale like olive oils, wines, charcuterie, and specialty cheeses. The only down side to this story, is that the Manzkes don't plan to open until Spring 2012. But as the saying goes, good things are worth waiting for.
