Barman Aidan Demarest is shaking multiple cocktails lately. From his consulting collaboration with mixologist Marcos Tello titled Tello Demarest Liquid Assets, to their leadership over at 1886, to Demarest's Beverage Director/GM position at The Spare Room in the Roosevelt. Now, after years working in bars owned by others, Demarest is finally preparing to launch his own.
Food GPS reports that Demarest has purchased SideBar in Glendale and on October 7 he will relaunch the venue as Neat. The nighttime haunt can accommodate 100 imbibers and each drink will be served "with glasses of neat spirit and Kold-Draft ice, and either 'soda,' 'citrus' or 'sweet.'"
Demarest’s last night at Spare Room is October 5, and once he leaves, head bartender Naomi Schimek will take over as Beverage Director and the powers that be will hire a new GM.

As far as future expansion, Tello Demarest Liquid Assets is working on two new food-related projects, one of which is the overhaul of Kate Mantilini's cocktails starting October 1.
