Sqirl Confitures Commercial Kitchen and Cooking School Coming to Silver Lake

Back in March Daily Candy wrote about uniquely flavored preserves made by Silver Lake chef Jessica Koslow, now Koslow is going for her own venue. She plans to open Sqirl's Preserving School mid-October in the former Gus's Lunchbox space on Virgil where she will use the building as both a commercial kitchen for Sqirl and a place to teach preserving. Koslow says, "There is nothing like it on the east side of town, and the kitchen will host classes on all sorts of preserve making: from jam to pickles to sauerkraut to kombucha to apple cider pressing (in vintage basket press) to olive oil making to charcuterie." She's going for a clean, modern, simple aesthetic, "almost a bit of a visual extension of Proof Bakery." [EaterWire]
