Michael Voltaggio Opens ink. on Wed, Here's A Looksee

The fun begins on Wednesday night when Michael Voltaggio, winner of Top Chef season six, opens his hotly anticipated modern Los Angeles restaurant, ink. And, don't forget, he launched ink.sack, a casual sandwich place, just a few feet away only six weeks ago. Talk about a busy schedule. If those long lines outside ink.sack are any indicator of MV's popularity, it's no surprise that ink. reservations are already fully booked for the next 30 days. In fact, SIV tried to score a reservation via ink.'s resy page, but no dice.

Volt's PR confirms that until ink. opens on Wednesday, all reservations are only accepted for up to 30 days in advance via ink.'s website. On Wednesday, when the restaurant opens, the phone line will go live as an alternative method to score a table. It's also worthwhile to note that ink. offers 10 bar seats open on a first come first serve basis.

But, come on in. There are 60 seats in the dining room, plus a private room that can accommodate another 10 or so guests. And speaking of the private dining room, check out that art. Chuck Close, Tilo Baumgartel, not too shabby AT ALL. The stacked knives on the wall up above? Those were done by Matthew Brannon.

So, inside ink. there's the main dining room presided over by GM Josh Goldman (The Langham), the bar helmed by Devin Espinosa (previously of The Tasting Kitchen), and MV's omakase bar. This is where Michael will prepare a tasting menu of about 10 to 12 courses for eight guests per night. However, the omakase bar will not open this coming Wednesday, launch still tbd. Also, no omakase reservations accepted at this time either.

For those unfamiliar with Michael Voltaggio and his style of cuisine, last year he could be found at The Dining Room in The Langham in Pasadena (pre overhaul) and before that he served as Chef de Cuisine at The Bazaar in the SLS. Voltaggio is known for this experimental, sometimes whimsical preparations using seasonal farm-to-table ingredients. The ink. menu will change based on availability of an ingredient, new ingredients, and MV's inspiration. At ink. expect the unexpected. Hours of operation run Wed, Thu, Sun 6PM-11PM, Fri and Sat 6PM to midnight.
