Brendan Collins, an original Palihouse chef who went on to help open Waterloo & City in Culver City then most recently debuted Larry's in Venice, has come full circle back to Palihouse. Collins recently accepted the role as Consulting Chef at Palihouse Courtyard Brasserie. He says, "I want to re-implement the cuisine that we had when I was there in the past and what Palihouse customers enjoyed and came back for." So, patrons can expect a slew of smaller plates like Lobster Grilled Cheese to Duck Confit and a couple of house-made charcuteries.
In other related expansion news, Paligroup will open another boutique property, Palihotel and Palihouse Café, at the corner of Melrose and Fairfax in January 2012. The site is currently a youth hostel, construction begins October 1. [EaterWire]
