Bill Kim, the Chicago-based chef who is looking to open a restaurant here in LA, recently held his first West Coast pop-up and Food GPS caught up with the itinerant chef for a few more details on that LA eatery. Kim says that he plans to cook Asian cuisine made with California produce, and his LA concept will likely be a mashup of his first two Chicago restaurants, Belly Shack and urbanbelly. When asked why he chose to open in LA, Kim responds "...this is the new frontier for great food, and I think L.A.’s the perfect place for what we do and what people are ready for." [Food GPS]
