Anyone who has walked past Bestia recently, the hotly anticipated collaborative Italian effort from chef Ori Menashe (Angelini Osteria) and restaurateur Bill Chait (Sotto, Picca, Short Order), will have noticed that the restaurant looks just about ready to serve. Lights are on, fixtures installed, and all furniture is in place. But, hold up. Although the eatery will physically open up to the public on October 16, it will launch as an iteration of Test Kitchen — the pop-up chef ground popularized for its rotating roster of big deal chefs — serving as such through November 11 with an anticipated list of leading cooks breaking in the Bestia kitchen.
On October 16 Test Kitchen kicks off with Walter Manzke (Republique) and Neal Fraser (The Strand House) cooking together with Bestia's pastry chef Genevieve Gergis and BLD's pastry chef Mariah Swan. Expect to find resident barmen Julian Cox and Josh Goldman behind the bar, maybe with a few of their friends. Score a resy here.
