Chef Michael Cimarusti at Providence wants to let diners know that white truffle season is underway, and this week he expects to receive his first seasonal shipment. Planned to grace the menu through December, in addition to a separate "White Truffle Menu Spontanée," dishes include Raviolo all' Uovo, Pasta alla Chitarra, White Truffle Risotto, and Soft Scrambled Eggs with a Fondue of Reblochon de Savoie and Shaved White Truffle.
