Santos Uy of Papilles and Mignon drops Eater a note to say that he and chef Tim Carey (Papilles) are thinking about transitioning Mignon wine bar to Mignon Bistro and offering a menu similar to that of Papilles. A test dinner at Mignon will take place this evening (closed to the public) with likely more to follow. While they're still solidifying the concept, Tim will serve as chef and the complete transition should take place in the new year. [EaterWire]
