Several bits of news in today regarding operations run by Michael Cardenas. First up, Cardenas is shuttering Fat Spoon, his year old hybrid curry and pasta restaurant in Little Tokyo. Tomorrow night marks the establishment's final night of service. Cardenas sold the space to Martin Koloff a restaurant group that runs a slew of restaurants in Las Vegas (Monta, Curry Zen), and here in Los Angeles they're planning a sanuki udon spot. Set to launch in late January, the unnamed eatery will focus on fat udon noodles from Japan's Kagawa prefecture which the diner dips into a bonito broth. Meanwhile, Cardenas says that he is thinking about relocating Fat Spoon to the Westwood vicinity, though next month he will feature Fat Spoon's menu at his Japanese izakaya spot, Toranoko.
In other news, Cardenas has hired chef Octavio Becerra of the shuttered Palate Food + Wine to consult at Laxy Ox Canteen and mentor new executive chef Travis Chase and sous Rhian Peterman who both joined The Ox by way of Seattle's Tin Table.
