Los Angeles has always been a great drinking town, but the level of sophistication available at cocktail bars has increased dramatically in the last five years. Not only are bartenders infusing liquors, growing their own gardens and carefully choosing glassware, they're also making their own ice. Cedd Moses (213 Nightlife; Seven Grand, The Varnish) has his own ice making operation, Penny Pound Ice in Little Tokyo. Soho House also has their own ice machine, which services both Soho House West Hollywood and Cecconi's. A fixture at food and drink events in LA, Michel Dozois, a former bartender, has taken his Névé Ice brand far and wide.
