041 Bacaro, the under construction Italian wine bar standing in for Santa Maria Barbecue on Washington Boulevard, should debut early next year. The restaurant's menu is slowly coming together and, in addition to charcuterie and pizzas, owner Giovanni Zuanon (Cipriani) plans to serve a Venetian menu with the following: bigoli en salsa (farro pasta, olive oil, anchovy and onion); polpette di carne (veal meatballs with garlic and parsley); scampi en saor (shrimp sauteed with onions, raisins and pine nuts); moscardino (baby octopus with parsley and anchovies); riso alla Veneziana (Venetian "paella" with saffron rice, seafood, vegetables and chicken); pan-roasted calf liver with grilled polenta; uovo al tartufo (poached egg with shaved truffle); and baked tagliolini pasta gratinee with guanciale and Grana Padano. Expect both a standup drinking and dining bar plus a full dining room.
