Matt Biancaniello is the bespoke cocktail maestro who left Library Bar, his stomping ground in the Roosevelt Hotel, last month to launch his own place. And while Matt has already revealed that he wants to ideally open on the west side, he adds that he's about to start taking cheese-making classes.
