Sergio Perera is the Spanish chef of Arzak and Jean-Georges fame who recently popped up at Marcona for two fancypants modernist dinners. And guess what? Those were test runs for the restaurant he is planning to open in Hollywood. Perera has a space and is close to signing a deal. Meanwhile, the chef is also working on a separate cocktail concept.
