Although u-sushi has been soft serving since late December, the fast casual customizable sushi spot will hold its grand opening on February 23 at 3PM and give out certificates for free sushi rolls to the first 300 guests. That and a sumo wrestler will be on hand for photos. Awesome. [EaterWire]
