Plan Check, which opened yesterday on Sawtelle, describes its menu as "modern American comfort food" and Eating LA explains why. On the menu one will find burgers, among other plates. Standard enough. But what does chef Ernesto Uchimura do to modernize the burger? He adds "ketchup leather, a solidified sheet of ketchup that locks the tomato flavor in place without saturating the Portuguese-style bun." [Eating LA]
