Over the years Il Sole has earned its reputation as a sceney, celebrity-frequented Italian ristorante serving better than average, if pricey, Southern Italian cuisine. And, with new operator Celestino Drago (Drago, Drago Centro) stepping in, the question remains -- will Drago maintain the Il Sole name or throw caution to the wind and experiment with an entirely new concept? Reps for Drago state that this very question is still up in the air. However, what we do know is that this venue's next incarnation, bearing the Il Sole name or not, will stay true to the DRAGO name and serve up rustic Italian plates, though at a lower price point. Changes are likely to commence in early April, but the restaurant itself will not shut down during the changeover. Instead, Drago plans to remodel the space room by room (despite the fact that Brent Bolthouse and co renovated the restaurant just last year), allowing guests to dine in one area while the other undergoes modifications. Right now the original Il Sole staff is in place.
