She's preparing a new menu which debuts April 2, and on this date Huck will begin Monday service (the cafe has been closed on Mondays up until this point). His menu: Tuesday, traditional Valencian-style paella with rabbit, free range chicken, artichoke, lima bean; Wednesday, Catalunya paella with chicken, swiss chard, artichoke; Thursday, Californian vegeterian paella with artichoke, mushroom, Swiss chard, lima bean; Friday, Valencian "Fideua" (egg noodle pasta) with squid ink, Santa Barbara prawn; Saturday, Iberico pork paella with local vegetables; and Sunday, country style paella with rabbit, escargot, chicken, artichoke, and lima bean.
