Inside Greenbar Collective, Now Distilling Downtown

Greenbar Collective has been distilling downtown since last week, but Litty Mathew and company only let us take a look inside this past weekend. The fully operational distillery will produce all of Greenbar Collective's signature organic spirits, including TRU organic vodkas, TRU2 organic gin, CRUSOE organic rums, FRUIT LAB organic liqueurs, BAR KEEP organic bitters and IXÁ organic tequila. The downstairs is full of lab equipment, gigantic stills, steel barrels and bottles. It's all very clean and shiny. The bar is upstairs, where the aforementioned tastings will take place.
