LA Weekly interviews Chef Michael Bryant (Palihouse) who has been hired by Mirabelle owners George and Lenore Gemanides to chef the restaurant once it reopens. Bryant is planing a "seafood charcuterie" menu inclusive of tuna ham, smoked salmon pastrami, cured swordfish, and smoked trout rillettes. Curious. [LAW]
