Bow & Truss Opens This Summer with Tello/Demarest Doing Drinks, Rivera/Playa Alum Tending Tapas

Great news for the denizens of North Hollywood. Morgan Margolis, CEO of Knitting Factory Entertainment (The Federal Bar), has hired Marcos Tello and Aidan Demarest of Tello/Demarest Liquid Assets (they did the drinks at 1886 in Pasadena) to curate the bar program at Bow & Truss, Margolis' forthcoming Latin concept. Tello/Demarest are working on a libation list that emphasises Sherry, Spanish brandy, tequila, and rums, and cocktails will draw inspiration from both Cali and Spain. Something different.

Margolis brings in Stefhanie Meyers as EC, most recently she served as chef de cuisine at The Federal, and before that she cooked through John Sedlar's Rivera and Playa. Just like the drinks, Meyers will craft a tapas-style Latin menu (some bigger plates too) with a modern Cali flair. Confirmed plates: Scallops with saffron polenta, corn/pepper salsa, piquillo sauce; and Seafood Pot with sea bass, mussels, clams, shrimp, lobster claw, and potato.
