As part of Eater's first ever pizza week, chefs at five LA restaurants that don't serve pizza agreed to make a special limited edition pizza-inspired creation served just this week and next. Every day we'll highlight a new pizza, starting with Freddy's Flatbread from Freddy Smalls.
Chef Charlie Parker over at Freddy Smalls on Pico organized this $16 Sicilian-style pie (+$2 add a fried egg) he calls Freddy's Flatbread. Inspired by spring and his love for ramps, Parker kneads a pizza dough made from flour which is smoked with applewood then quickly grills the dough on one side. He adds a sofrito-tomato sauce, pickled ramps, Bellwether ricotta cheese, shiitake mushrooms, and bakes that all together and tops the hot pie with spicy field greens. The pizza is offered on Freddy's late nigh menu after 10:30PM.

Description: Spiced ground lamb (tomato, sumac, all spice, olive oil, onion, garlic) on dough with self-serve condiments: arugula, dried oregano, sumac, pickled chilies, garlic sauce.

What: An Ode to the Mexican Pizza
Description: Deep dish pizza made from masa harina (corn tortilla flour) layered with Longaniza sausage, black beans, queso fresco, heirloom tomato pico de gallo, skirt steak asada, and topped with a sweet corn salsa.

Description: Semilla salsa tortilla, burrata, channa crisp, upland watercress, micro amaranth, dehydrated red onion and bell pepper, salsa verde, sliced jalapeno and Marquez De Valdueza extra virgin olive oil.

Description: Cheeseburger meets pizza. Pepperoni and sausage blended with a wagyu beef patty, topped with a house-made pizza sauce, melted burrata cheese, and a trio of mushrooms.
