From Chef Joseph Mahon: Early Bird Rises in Fullerton

It's been awhile since we heard from Burger Parlor owner and fine-dining chef Joseph Mahon. Word just in that he's working on a casual cafe concept called Early Bird, set to open this July in the OC. Partners are lawyer and entrepreneur Tank Menzies and nutritionist Marcello Caraveo. Early Bird will serve Single Origin coffee and breakfast items like brioche French toast with spiced almonds and grilled apple compote and Toad in a Hole with grilled asparagus and smoked salmon. Lunch items hint at Mahon's Bastide days: coconut-curry soup; fried chicken salad with buttermilk dressing; and a fancy grilled cheese with fontina and Brie. "At night, we'll host pop-up dinners," writes Mahon. This new chapter for the starred-chef may include the expansion of Burger Parlor as well.
