After opening San Diego outpost number five on the eve of national restaurant expansion, some would argue that Brian Malarkey (Top Chef Season 3) may have a full plate. So, what’s next? An African restaurant in Uganda named after the textile Olubugo. No joke. Malarkey and business partner James Brennan expect to debut the eatery later this summer in partnership with Aidchild, a non-profit organization that provides homes, clinics, and laboratory support for children and families in Uganda. Apart from paying the employees, all the money made from the restaurant will also benefit the non-profit organization. This would make Malarkey the first cheftestapant to expand overseas.
