Pasadena's Trattoria Neapolis Makes Its Grand Entrance Today

As promised, Trattoria Neapolis opens its gilded doors today. The expansive space, conceptualized by entrepreneur and owner Perry Vidalakis, designed by Hatch, is an homage to Italian cuisine. Of course there is fresh pasta, and a room full of cured meats, but do also check out the dough room, the custom wood-burning grill, the smoker, the La Marzocco GB5 (for the Stumptown beans), and chef Bryant Wigger's 7,000 pound wood-fueled oven. Meanwhile, Hallie Beaune, one of the Beer Chicks, is in residence to guide guests to their beer of choice. Vincenzo Marianella (Copa D'Oro) crafted the cocktail list and Diego Meraviglia, a 4th level sommelier, picked out the vino. All in all, it's a stage built and set for success. Trattoria Neapolis is open tonight for dinner, but will eventually serve from 11 a.m. to 10 p.m. Sunday through Thursday, and 11 a.m. to 11 p.m. Friday and Saturday.
