Copenhagen hosted 500 chefs, purveyors, academics, and journalists inside a circus tent along the harbor for Rene Redzepi's MAD Symposium. Luminaries such as David Chang, Fergus Henderson, Wylie Dufresne, and Dan Barber presented. A major theme was how to handle tradition versus progression in cuisine, where Mexico's Enrique Olvera of Pujol showed images of his interpretations of classic dish.
