In 2008 The Foundry chef Eric Greenspan won LA's Grilled Cheese Invitational with his short rib and Taleggio creation. The following year he revealed plans to open a grilled cheese cafe adjacent to his Melrose eatery, and here now over two and a half years and countless updates later, the place has still yet to launch. However, although that Spacecraft ply looks unchanged, last night Greenspan finally shared a cheesey update. The chef explained that construction has actually begun, and he (for realz) foresees a November debut. Badaboom.
