After departing Marina Del Rey's Vu last January, chef Kyle Shutte has opened 54Twenty in a revamped 60's diner in Hollywood, putting modern twists on brunch classics such as steak & eggs, corned duck reuben, and BLT with avocado and bacon mousse. The Richard Blais-alum still uses scientific, modernist techniques but hopes to shake off the stigma of using them in a familiar setting, instead of fine dining. Open 7 a.m. to 9 p.m. daily.
