puffy%20shells-001.jpgFirst there was the bäco, which spawned Bäco Mercat, now lauded chef Josef Centeno is focusing on the puffy taco, a likely centerpiece of his forthcoming Tex-Mex concept, Bar Amá. LAmag caught up with the chef for an early taste of the "prototype" which is made with a corn tortilla that is fried until puffy then stuffed. Like those chewy tortilla chips from Malo, but in taco form. [LAmag]
