As of September 1, Seiji Nakano (Katana, Sushi Roku) is the new head chef or "itamae" chef at Michael Cardenas' eclectic sushi and izakaya spot, Toranoko, downtown. Nakano was formerly trained as a chef in Japan, and Cardenas explains that "his style is pure Japanese but he has added the California essences of flavor with So-Cal ingredients."
