Tony Esnault, the Patina chef who earned the restaurant a perfect four star LA Times review back in 2010, has departed from the fine dining institution to work with Church & State owner Yassmin Sarmadi on her new seasonal French concept, Spring. However, since that project is still months out (slated to open late 2013), right now Esnault is in the kitchen at Church & State, taking over for former executive chef Jeremy Berlin who clocked out to work with chef Gordon Ramsay at one of this new Vegas projects.
