OC Register restaurant critic Brad A. Johnson isn't much a fan of chain restaurants, but he feels as though "Ramen Jinya is not your average chain." He checks out the newest location in Costa Mesa and declare the following: "The best and most important thing on the menu is the signature tonkatsu ramen, with slow-cooked-until-it-falls-apart pork belly. It's a massive bowl of noodle soup, a heady, steamy, salty slog of pork broth that's been amped up with dried fish flakes, which don't really add the flavor of fish but rather a very powerful umami."
