Nick Mathers, one of the three Australian guys behind Eveleigh on W. Sunset, is opening a new lunch and dinner place on W. Third Street called Goldie's at the end of February/beginning of March. Slated to serve a simple menu highlighting sustainable practices and SoCal produce (think along the lines of Eveleigh but more casual), Mathers has hired young Australian chef Thomas Lim to oversee the kitchen. Here are some examples of his food.
Mathers is a partner in a Sydney, Australia restaurant called Duke Bistro where Lim previously worked. Which is how the two met. Prior to that Lim trained at Tetsuya's, also in Sydney, considered the best restaurant in Australia and also ranked in the top 50 restaurants in the world for the last 10 years by S.Pellegrino. Should be very interesting to see how this one turns out.
