Patina, which recently lost four star LA Times chef Tony Esnault, will serve three ($85), five ($125), and seven-course ($175) black truffle menus from February 5 to 8. So far some planned dishes are butternut squash velouté with black truffle brioche; filet of John Dory with black truffle venoise, salsify, bitter greens; and vanilla pain perdu with roasted pear, black truffle crème anglaise.
