Las Vegas chef Alex Stratta, television personality and force behind his namesake two-Michelin starred restaurant Alex in Wynn (now shuttered), has moved to Los Angeles to accept the executive chef role at Scott Conant's Beverly Hills branch of Scarpetta in the Montage. Stratta will replace longtime chef de cuisine Freddy Vargas who is leaving to run the kitchen at SBE's Mercato di Vetro. Vargas' last day at Scarpetta is January 11 and he begins at Mercato di Vetro on January 20.
While Stratta is already in Los Angeles and on site at the Montage, he has yet to hit Scarpetta's kitchen. Conant is excited about bringing Stratta on board and says that his goal was to get "the best available chef on the market." In the coming months, Stratta will work with Conant to launch a new collaborative seasonal Italian menu.
