As predicted yesterday, chef Chad Colby — who has worked under Nancy Silverton for the past few years at Mozza's Sculoa di Pizza — is part of Mario Batali, Joe Bastianich, and Silverton's newest LA project, chi SPACCA, which replaces the Scuola on Melrose.
In 2011, Colby won the LA stop of Cochon 555 with his exceptional house-cured meats, which he eventually began to serve during Silverton's family-style Scuola dinners. In May, Salumi Bar launched on Thursday nights as its own entity , and as of January 1 Colby expanded days of operation. It seems that all along a new concept was brewing. For now team Mozza is remaining mum on details, but Colby is definitely part of this new project.
