Chef Anthony Zappola decamped from Craft restaurant group to take on the role as chef de cuisine at The Royce Wood-Fired Steakhouse, but he has departed the Pasadena property to serve as executive chef of a new Tom Colicchio restaurant, Heritage Steak, at The Mirage in Las Vegas.
