In it, Myers talks about the restaurant as a product of his travels and how his dishes are a snapshot from his experiences in Asia. Myers explains the restaurant's name as such: Hinoki, a Japanese Cypress tree, represents Japan, and "The Bird" signifies travel, but "The Bird" will always return home to its Hinoki tree. [Vimeo]
