Pine & Crane Noodle Co. Replacing Cru in Silver Lake

Quick change of plans. Kris Yenbamroong is NOT opening Night + Market Song in place of the shuttered Cru in Silver Lake, despite insider sources who suggested as much. Rather, Vivian Ku, a CIA grad, is turning the space into Pine & Crane Noodle Co., a seasonal Taiwanese-Chinese fast casual restaurant named after her family's noodle factory launched in the 1950s in Taiwan.

Ku's father operates a farm near Bakersfield that focuses on rare and premium Asian vegetables, and she'll therefore source all of her produce off the property. Basically, she's looking to apply the seasonal, farm-to-table mantra to her mixed Asian menu. Everything from dan dan noodles, sesame noodles, and beef noodle soup to dumplings, bao, beef rolls, scallion pancakes, and rice dishes. Beer, wine, and Taiwanese teas alongside. Ku hopes to open in early January and hours of operation will run daily from 11 a.m. to 10 p.m. during the week and from 11 a.m. to 11 p.m. on Friday and Saturday. [EaterWire]
