Nic's in Beverly Hills is rolling out a new series of once monthly pop-ups and first up is chef Kim Vu of Vucacious Catering cooking on October 13. Vu's four course Vietnamese dinner runs $80 a head and includes a bunch of small bites to start and infused vodka martinis and sparkling wine. Think baby squid salad, Nam Vang Noodles, shaken beef or chicken, and panna cotta. [EaterWire]
